Shaved Beets with Roast Salmon
Beets contain nitrates that are suggested to improve mental and cognitive function by increasing blood flow to the brain. Those same nitrates can also boost your energy! A double win. Beets also contain a lot of potassium, which eases bloating, regulates blood pressure, and help your muscles relax (including your uterus!).
(Note: Eating too many beets could turn your pee pink, but hey, when you’re on your period...)

INGREDIENTS LIST
Serves 4
Extra-virgin olive oil, for greasing
1 ½ pounds salmon fillets (1 large fillet or four 6-ounce fillets)
Kosher salt and freshly ground pepper
4 medium golden or red beets, peeled and very thinly sliced
2 teaspoons freshly squeezed lemon juice
RECIPE
- Preheat the oven to 300°F and grease a baking dish large enough to fit the salmon lightly with olive oil. Add the salmon, skin side down, to the dish, then brush the top with olive oil and season with salt.

Bake until cooked through, 15 to 25 minutes.
(You will know if the salmon is done when a knife slides through easily and the fish flakes, or when an instant-read thermometer reaches 120°F—it will still be quite pink in color.) - Meanwhile, in a medium bowl, toss together the beets, lemon juice, and 2 teaspoons olive oil. Season with salt and pepper.
- Top the salmon with the beet salad. This dish can be served warm or at room temperature.
